Hilton Manila's Hua Yuan Features Hilton Kuala Lumpur's Award-Winning Chef


One of the many activities that Hilton Manila has lined up for its 100th year celebration is the exclusive collaboration with  award winning guest chef from Hilton Kuala Lumpur, Chef Lam Hock Hin.

The Malaysian born Chef Lam  has an extensive  experience in his field that spans 3 decades  reflecting his rise from humble beginnings as  a kitchen helper in the 80s to   his stature now as a famed and award winning Master Chef  and at the helm of Hilton KL's highly acclaimed restaurant "Chynna" .

His jovial and cheerful exterior belies a brilliant  career that spawned multiple honors and awards.  What a joy to meet him and personally hear him expound on his latest creation with gusto and a lot of humor. This was a collaboration   in tandem with resident Chinese Sous Chef Kevin Xu...

Flavors of China


Appetizer
Mix Salad with Kaori Bako, golden scallops and anchovies


The flavors are familiar and much loved evoking images of  Bicol Express or Laing  (local dishes with coconut cream) perhaps because of the gata or coconut cream component.




Double Boiled Black and White Garlic Soup
with Sea Cucumber and Spare Ribs


Think Bulalo ( another iconic rich local broth that is a favorite in any Pinoy table) sans the bone marrow. The sea cucumber was quite an exciting element being as it were my first time  to taste this exotic sea creature. 



Hua Yuan Fragrant Tea Smoked Duck

The aroma wafting from the dish immediately holds you captive. It promises ...and delivered. The duck was tender, flavorful and scrumptious. The Pinoys in us are ardently wishing for cups of rice please. But we know that in Chinese culture, rice is served last. So all we can do is well just pounce on the delectable fowl before us.

Butter Milk Prawn with Egg Flakes and Scented Curry Leaves

Succulent prawn that  was flavorful and satisfying. Alas the hankering for rice persist as each dish presented would marry well with bowls of steamed rice.


Deep Fried Grouper Sweet and Sour style with Pine nuts

Another familiar and well loved dish. Think Escabeche but with pine nuts.


Smoky Grilled Sliced Pork with Leeks
Pork were thinly sliced , tender and peppery..  I loved how it paired well with the sweet leeks. 


Fragrant Rice with XO Sauce

I dont know if it had something to do with the seemingly long wait , because the rice was gorgeous and quite delicious.


Coconut Cream Jelly with Taro Balls and Peach Gum

Think our local gata minus the bilo bilo and saba. The coconut cream jelly was also more solid compared to our liquidy gata

Overall,

Chef Lam Hock Hin and Sous Chef Kevin Xu's  8 course menu is a journey into the familiar and homey. That was not really a surprise because Cantonese cuisine  is one that is much loved by Pinoys.

The use of coconut cream  in the salad was one that is memorable and doable. I am looking forward to replicating it in my own kitchen  and suprising the piggery with it.

Chef Lam and Sous Chef Kevin's 8 Course Menu will be available at Hu Yuan until June 8 at P2888 per person.
