That SINIGANG FRIED CHICKEN intrigues. Even more so when I saw the presentation.
What?
No broth ??!
Turned out the broth is now a sauce contained in a shallow 3-way container normally reserved for our toyo, patis, suka and other condiments.
A dry sinigang. Hmmm
The gravy "mimics' the sourness of the broth. Interesting. So i sliced me a piece of the crunchy fried thigh, the tempura okra, dunked both in the sinigang gravy and together with rice put them all in my mouth in one go.
I tasted the sourness of the sauce. It was thick and the acidity can not be denied. It tempered the textured crispiness of both the chicken and the tempura okra. The chicken itself had a hint of sourness from the marination it underwent for a number of hours before being deep fried.
Yes this was indeed Sinigang albeit without the broth, totally opposite the traditional sinigang we know.
Do I like it enough to come back for it ?
Actually YES ! I loved the whole novel idea. The execution was flawless. The flavor was spot on. Moreover the price was friendly on the pocket. Where will you find a 1 pc sinigang fried chicken with rice at P129 only. You want 2 pcs? P199 only. Maybe in a fast food joint. But see here you are in a restaurant in Makati. Its amazing to find a resto that serves good food at that price.
Anyway lest I forget, Alek Cafe + Kitchen also served us other amazing dishes, as follows
